  • 8 large fresh peaches (peeled, pitted, and sliced)
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1/3 cup organic brown sugar (for topping)
  • 1/3 cup organic sugar (for topping)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance butter (cut into small pieces)
  • 1/3 cup boiling water
  • 4 tsp organic sugar (for topping)
  • 1 1/2 tsp cinnamon (for topping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine sliced peaches with brown sugar, white sugar, cinnamon, corn starch, lemon juice, and nutmeg. Stir gently until well coated.
  3. Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
  4. Meanwhile, mix flour, sugars, baking powder, and salt in another bowl. Blend in cold butter until crumbly.
  5. Add boiling water to the topping mixture and stir until just combined.
  6. Spoon topping over baked peaches evenly.
  7. Mix additional sugar and cinnamon in a small bowl and sprinkle over the cobbler.
  8. Bake for an additional 35 minutes or until the topping is golden brown.
  9. Serve warm with dairy-free vanilla ice cream if desired.
