- ⅓ cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter, melted
- 1 cup fresh peaches, peeled and diced
- Vegetable oil for frying
- 1 cup powdered sugar
- 2–3 tablespoons milk or cream
- ½ teaspoon vanilla extract
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well combined.
- In another bowl, mix milk, egg, vanilla extract, and melted butter until smooth.
- Combine wet ingredients into dry ingredients; stir just until mixed. Gently fold in diced peaches.
- Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
- Drop spoonfuls of batter into hot oil and fry for about 2–3 minutes on each side until golden brown.
- Drain on paper towels.
- Prepare the glaze by mixing powdered sugar, milk (or cream), and vanilla extract until smooth.
