  • 1 large egg

  • 1 tablespoon unsalted butter, melted
  • 1 cup fresh peaches, peeled and diced
  • Vegetable oil for frying
  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well combined.
  2. In another bowl, mix milk, egg, vanilla extract, and melted butter until smooth.
  3. Combine wet ingredients into dry ingredients; stir just until mixed. Gently fold in diced peaches.
  4. Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil and fry for about 2–3 minutes on each side until golden brown.
  6. Drain on paper towels.
  7. Prepare the glaze by mixing powdered sugar, milk (or cream), and vanilla extract until smooth.
  8. Drizzle glaze over warm fritters before serving.
