  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole milk
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, seasonings, salt, pepper, and milk. Mix until just combined; avoid overmixing.
  3. Shape the mixture into a loaf on the prepared baking sheet or press into the loaf pan.
  4. Bake for 40–45 minutes until the internal temperature reaches 165°F (74°C).
  5. While baking, melt butter in a small saucepan over medium heat. Add minced garlic and sauté until fragrant (1–2 minutes). Stir in Parmesan and parsley; cook until slightly thickened (about 1–2 minutes more).
  6. Brush the meatloaf with the glaze and return to oven for an additional 5–7 minutes.
  7. Allow to rest for 5 minutes before slicing and serving.
