Ingredients
- 8 oz center-cut beef filet
- 1 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 cup finely chopped mushrooms (cremini or button)
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp fresh thyme leaves
- 3 slices turkey slices
- 1 sheet puff pastry
- 1 egg yolk (for egg wash)
- Salt and pepper to taste
Instructions
- Sear the beef filet seasoned with salt and pepper in heated olive oil until browned on both sides. Brush with Dijon mustard and let it rest.
- Prepare mushroom duxelles by sautéing finely chopped mushrooms with butter, garlic, and thyme until moisture is evaporated. Allow to cool.
- On plastic wrap, layer turkey slices, spread mushroom mixture on top, then place the seared beef and roll tightly. Chill for 15 minutes.
- Roll out puff pastry, unwrap the beef mixture onto it, seal edges with egg wash, and brush the top with remaining egg yolk.
