  • 8 oz center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices turkey slices
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the beef filet seasoned with salt and pepper in heated olive oil until browned on both sides. Brush with Dijon mustard and let it rest.
  2. Prepare mushroom duxelles by sautéing finely chopped mushrooms with butter, garlic, and thyme until moisture is evaporated. Allow to cool.
  3. On plastic wrap, layer turkey slices, spread mushroom mixture on top, then place the seared beef and roll tightly. Chill for 15 minutes.
  4. Roll out puff pastry, unwrap the beef mixture onto it, seal edges with egg wash, and brush the top with remaining egg yolk.
  5. Bake at 400°F for 15–20 minutes until golden brown. Rest before slicing.
