- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground oregano
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 4 cloves garlic, finely minced
- 1 tablespoon olive oil (for frying)
- 1/2 teaspoon lemon zest
Instructions
- In a mixing bowl, combine ground chicken, salt, black pepper, cumin, oregano, fresh dill, fresh mint, minced garlic, and lemon zest. Mix until just combined.
- Using a cookie dough scoop or tablespoon, portion out the mixture and shape into meatballs.
- Heat olive oil in a large skillet over medium heat. Cook meatballs in batches for about 3–4 minutes on each side until browned and cooked through (internal temperature should reach 165°F).
- Serve warm over chopped romaine lettuce with tzatziki sauce and your choice of veggies.
