  • 3 bell peppers, halved horizontally and seeded
  • 1 tablespoon extra virgin olive oil
  • 1 pound ground chicken breast
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese, divided, plus more for sprinkling
  • 2 tablespoons fresh dill, chopped
  • ½ cup water
  • lemon wedges, for serving

Instructions

  1. Preheat your oven to 350°F and cook the rice according to package instructions.
  2. Halve the bell peppers horizontally, remove seeds, and place them cut side up in a baking dish.
  3. Heat olive oil in a skillet over medium heat, add ground chicken, season with salt and pepper, cooking until browned.
  4. Stir in Italian seasoning, diced onion, minced garlic, and zucchini; cook for an additional two minutes.
  5. In a mixing bowl, combine cooked rice with the chicken mixture, tomatoes, olives, feta cheese, and chopped dill.
  6. Stuff each pepper with the filling mixture and sprinkle extra feta on top. Add water to the baking dish and cover with foil.
  7. Bake for 40-45 minutes until peppers are tender.
