- 1 lb beef stew meat, cubed
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 can (14 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 cup orzo
- 2 ½ cups water or beef broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Brown the cubed beef on all sides for about 5–7 minutes.
- Add the chopped onion and minced garlic; sauté until soft (3–4 minutes).
- Stir in the tomato paste and cook for 1 minute until fragrant. Then add crushed tomatoes and broth.
- Season with salt, pepper, cinnamon stick or ground cinnamon, and bay leaf. Simmer for 25–30 minutes.
- Incorporate the orzo pasta and cook for an additional 10 minutes, stirring often. If necessary, add more broth to reach desired consistency.
- Once the orzo is tender and the sauce has thickened, remove from heat and garnish with fresh parsley.
