Ingredients

  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan
  • Salt & pepper to taste

Instructions

  1. Season chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice. Preheat grill to medium-high heat.
  2. Grill chicken for 5-6 minutes on each side until fully cooked.
  3. Toss halved Brussels sprouts in olive oil, salt, and pepper; spread on a baking sheet and roast at 200C (390F) for about 20 minutes.
  4. For the sauce, melt butter in a saucepan over medium heat. Stir in flour to form a roux. Gradually whisk in milk until thickened; add minced garlic and Parmesan until smooth.
  5. Assemble by slicing the grilled chicken and layering it with roasted Brussels sprouts; drizzle with the creamy sauce.
