Ingredients
- 2 boneless, skinless chicken breasts
- 300g Brussels sprouts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & black pepper to taste
- Juice of lemon
- 1 tbsp butter
- 1 tbsp flour
- 1 cup milk
- 2 cloves garlic, minced
- 1 cup grated Parmesan
- Salt & pepper to taste
Instructions
- Season chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice. Preheat grill to medium-high heat.
- Grill chicken for 5-6 minutes on each side until fully cooked.
- Toss halved Brussels sprouts in olive oil, salt, and pepper; spread on a baking sheet and roast at 200C (390F) for about 20 minutes.
- For the sauce, melt butter in a saucepan over medium heat. Stir in flour to form a roux. Gradually whisk in milk until thickened; add minced garlic and Parmesan until smooth.
- Assemble by slicing the grilled chicken and layering it with roasted Brussels sprouts; drizzle with the creamy sauce.
