Instructions
- Rinse 1½ cups of long grain white rice under cold water until clear. In a medium saucepan, combine rice with 3 cups of water; bring to a boil. Reduce heat to low, cover, and simmer for 18 minutes or until water is absorbed. Remove from heat and let sit for 5 minutes before fluffing with lime juice, chopped cilantro, and salt.
- In a large mixing bowl, whisk together 2 tablespoons olive oil, 1 teaspoon kosher salt, black pepper, chili powder, garlic powder, and oregano. Add 1½ pounds of chicken strips to the marinade; toss to coat.
