Ingredients
- 1 large chicken breast
- 2 medium sweet potatoes, cut into wedges
- 1 ripe avocado
- Juice of 1/2 lime
- 1 cup cherry tomatoes, halved
- 1/4 small red onion, thinly sliced
- 1 tbsp olive oil (for chicken)
- 1 tbsp olive oil (for sweet potatoes)
- 1 tbsp olive oil (for salad)
- 1/2 tsp paprika
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
Instructions
- Preheat your oven to 200C (400F).
- Toss sweet potato wedges with olive oil, smoked paprika, and salt. Spread on a baking sheet and bake for 20-25 minutes until golden.
- While fries bake, season chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes on each side until cooked through.
- In a bowl, mash avocado with lime juice, salt, and pepper for guacamole.
- Combine halved cherry tomatoes, diced avocado, sliced red onion, olive oil, salt, and pepper in another bowl for the salad.
- Assemble bowls by layering sweet potato fries at the bottom followed by sliced chicken, guacamole, and tomato-avocado salad.
