Ingredients

  • 1 large chicken breast
  • 2 medium sweet potatoes, cut into wedges
  • 1 ripe avocado
  • Juice of 1/2 lime
  • 1 cup cherry tomatoes, halved
  • 1/4 small red onion, thinly sliced
  • 1 tbsp olive oil (for chicken)
  • 1 tbsp olive oil (for sweet potatoes)
  • 1 tbsp olive oil (for salad)
  • 1/2 tsp paprika
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss sweet potato wedges with olive oil, smoked paprika, and salt. Spread on a baking sheet and bake for 20-25 minutes until golden.
  3. While fries bake, season chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes on each side until cooked through.
  4. In a bowl, mash avocado with lime juice, salt, and pepper for guacamole.
  5. Combine halved cherry tomatoes, diced avocado, sliced red onion, olive oil, salt, and pepper in another bowl for the salad.
  6. Assemble bowls by layering sweet potato fries at the bottom followed by sliced chicken, guacamole, and tomato-avocado salad.
