  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp chili powder (optional)
  • Salt to taste
  • Pinch of salt

Instructions

  1. Season chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Grill chicken on medium heat for 5-6 minutes per side until cooked through; let rest before slicing.
  3. Toss sweet potato fries in olive oil and seasonings; spread on a baking sheet.
  4. Bake fries at 425°F (220°C) for 20-25 minutes until crispy.
  5. For guacamole, mash the avocado with lime juice and cilantro in a bowl.
  6. Mix diced avocado, cherry tomatoes, red onion, lime juice, and salt for salsa.
  7. Assemble by layering sweet potato fries at the bottom of a bowl; top with sliced chicken, guacamole, and salsa.
