Ingredients
- 2 lb boneless skinless chicken thighs
- 3 cloves garlic
- 1 tbsp apple vinegar
- 3 tbsp lemon juice
- 1 tbsp olive oil
- 3 tbsp Greek yogurt
- 1 ½ tbsp dried oregano
- Fresh cucumbers
- 3 tomatoes
- 1/2 red Spanish onion
- 4 to 6 pita breads
Instructions
- Marinate chicken: In a resealable bag, combine minced garlic, apple vinegar, lemon juice, olive oil, Greek yogurt, oregano, salt, and pepper. Add chicken thighs and marinate for at least 2 hours.
- Make tzatziki: Grate cucumbers and squeeze out excess liquid. Mix with Greek yogurt, lemon juice, olive oil (optional), minced garlic, salt, and pepper; refrigerate for at least 20 minutes.
- Prepare salad: Dice tomatoes and cucumbers; chop onion and parsley. Season with salt and pepper.
- Grill chicken: Preheat grill over medium-high heat. Cook chicken for about 2-3 minutes per side until golden brown and cooked through (internal temperature of 165°F).
- Warm pita: Heat pitas on the grill or pan until soft.
- Assemble gyros: Layer salad ingredients and sliced chicken in each pita; top with tzatziki sauce.
