  • 2 whole mackerel (cleaned, gutted, scaled)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili flakes (optional)
  • 1 lemon (½ sliced for grilling, ½ for serving)
  • Fresh rosemary or thyme sprigs

Instructions

  1. Rinse the mackerel under cold water and pat dry. Score the skin with shallow cuts.
  2. Mix olive oil, minced garlic, paprika, salt, black pepper, and optional chili flakes in a bowl. Rub this mixture over the fish and inside the cavity.
  3. Stuff each fish with lemon slices and rosemary or thyme.
  4. Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
  5. Grill the mackerel for about 4–5 minutes on each side until crispy and flaky.
  6. Serve hot with fresh lemon juice over the top alongside your favorite sides.
