  • 1 lb baby or small red potatoes
  • 2 ears corn, shucked and sliced
  • 2 (4 oz) chicken or turkey cajun style sausage links
  • 1 lb large raw shrimp, peeled and deveined
  • 6 Tbsp butter
  • 2 Tbsp fresh lemon juice
  • 2 tsp chopped fresh thyme leaves
  • 2 cloves garlic, minced
  • 2 tsp Old Bay seafood seasoning
  • 2 Tbsp chopped fresh parsley leaves

Instructions

  1. Preheat your grill to medium-high (425°F). Cut eight sheets of heavy-duty aluminum foil.
  2. Microwave potatoes for 3 minutes until slightly tender; slice them.
  3. On each double-lined foil sheet, layer potatoes, corn, sliced sausage, and shrimp.
  4. Melt butter and mix in lemon juice, thyme, and garlic; drizzle over each packet.
  5. Season with Old Bay seasoning and seal packets securely.
  6. Grill for 12-15 minutes until shrimp are cooked through and potatoes are tender.
