  • 5 medium zucchinis
  • Salt
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup crumbled goat cheese
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Pepper to taste

Instructions

  1. Slice the ends off the zucchinis and cut them lengthwise into 1/2-inch pieces.
  2. Sprinkle salt over the zucchini slices and let them sit for 20 minutes to drain excess moisture. Pat dry with a cloth.
  3. Preheat your grill to medium-high heat and brush oil on both sides of the zucchini.
  4. Grill the zucchini slices for 10-15 minutes, flipping halfway until they're tender and have grill marks.
  5. Arrange the grilled zucchini on a plate, top with crumbled goat cheese and basil, then drizzle with honey and season with pepper.
