  • 1/3 cup sour cream
  • 2 pounds beef brisket or boneless chuck roast, cut into 1-inch pieces
  • 8 ounces button or baby bella mushrooms, quartered
  • 4 medium carrots, sliced
  • 1 large onion, diced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • Fresh thyme leaves

Instructions

  1. Prepare the pie crust by mixing flour and diced butter until crumbly; add sour cream and chill for at least 30 minutes.
  2. In a skillet or Dutch oven, brown the beef on all sides and set aside. Sauté onions until translucent, then add garlic.
  3. Add mushrooms and carrots; cook until softened. Stir in flour and tomato paste, then return beef to the pot along with seasonings and broth.
  4. Simmer for about 2 hours until the beef is tender.
