  • 2 carrots (chopped)
  • 6 cups chicken stock
  • 1 tsp soy sauce
  • 1 block Japanese curry mix
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 2 cups panko breadcrumbs
  • 6 boneless skinless chicken thighs (pounded to ½-inch thickness)
  • neutral oil for frying

  • katsu sauce (homemade or store-bought)

Instructions

  1. For the curry sauce: Heat oil in a skillet, sauté onions until translucent, add garlic, ginger, grated apples, and carrots. Pour in chicken stock and soy sauce; bring to a simmer before adding the Japanese curry mix until dissolved.
  2. For the chicken: Set up three bowls with flour, beaten eggs, and panko breadcrumbs. Coat each chicken thigh first in flour, then egg, followed by panko.
  3. Fry the chicken in hot oil until golden brown on both sides. Drain on paper towels.
  4. Serve rice topped with curry sauce and sliced chicken katsu.
