  • 1.5 lbs baby potatoes, halved or quartered
  • 1.5 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • Salt to taste (use sparingly)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine baby potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss until evenly coated.
