Ingredients

  • 2 cups old-fashioned oats
  • 3/4 cup oat flour
  • 3 tablespoons coconut oil
  • 3/4 cup honey (or low-carb sweetener)
  • 11 1/3 cups thick plain Greek yogurt
  • Assorted fresh fruits (blackberries, raspberries, kiwi, strawberries, blueberries)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 10-inch cake pan and set aside.
  3. In a large bowl, mix oats, oat flour, cinnamon, vanilla extract, and salt. Add honey and coconut oil; combine until dough sticks together.
  4. Press the mixture into the cake pan evenly.
  5. Bake for about 10 minutes until golden brown. Allow cooling completely.
  6. In another bowl, mix Greek yogurt with maple syrup or honey and vanilla extract until smooth.
  7. Spread the yogurt mixture over the cooled crust and top with assorted fruits.
