  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour or spelt flour

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9" x 5" loaf pan by lining it with parchment paper or greasing it with cooking spray.
  2. In a large bowl, mash the bananas until smooth. Stir in the grated zucchini, egg, olive oil, maple syrup, and vanilla extract until well combined.
  3. Add cinnamon, baking powder, baking soda, and salt to the mixture, whisking to combine. Gently fold in the flour using a spatula until just mixed; avoid overmixing.
  4. Pour the batter into the prepared loaf pan and smooth the top. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  5. Let cool in the pan for about 10 minutes before transferring to a cooling rack. Once completely cooled, slice and enjoy.
