Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9" x 5" loaf pan by lining it with parchment paper or greasing it with cooking spray.
- In a large bowl, mash the bananas until smooth. Stir in the grated zucchini, egg, olive oil, maple syrup, and vanilla extract until well combined.
