  • 2 cups whole wheat or spelt flour
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9 x 5 loaf pan by lining it with parchment paper.
  2. In a mixing bowl, combine the egg, applesauce, honey, vanilla extract, cinnamon, baking soda, baking powder, and salt. Whisk until well combined.
  3. Gently fold in the shredded zucchini.
  4. Gradually add in the flour until just combined; avoid overmixing.
