  • 12 ounces smoked chicken or turkey sausage (sliced)
  • 1 small onion (diced)
  • 1 bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder
  • 1 cup long-grain white rice (uncooked)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 2 cups low-sodium chicken broth
  • Salt and black pepper to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell pepper; sauté for about 5 minutes until soft. Stir in minced garlic and cook for another minute.
  2. Add sliced sausage to the pot and cook for about 5–7 minutes until browned.
  3. Stir in ground cumin, smoked paprika, oregano, chili powder, salt, and pepper until well combined.
  4. Add uncooked rice and drained black beans to the pot. Pour in chicken broth and stir well. Bring to a boil.
  5. Reduce heat to low, cover, and let simmer for about 20 minutes or until rice is cooked through.
  6. Fluff with a fork before serving. Garnish with chopped cilantro and serve with lime wedges.
