  • 1/2 cup warm water
  • 1/2 cup warm milk
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1 1/2 tsp salt
  • 3 tbsp unsalted butter (melted)
  • 1 cup cold unsalted butter (for the butter block)
  • 1 cup semi-sweet chocolate chips or batons
  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)

Instructions

  1. Activate the yeast by mixing warm water, milk, sugar, and yeast in a bowl; let sit until foamy.
  2. Combine flour and salt in a large bowl; add melted butter and yeast mixture. Knead until smooth.
  3. Shape dough into a disk, wrap in plastic wrap, and refrigerate for at least an hour.
  4. Create a butter block by beating cold butter between parchment paper until flat.
  5. Roll out chilled dough into a square and place the butter block diagonally inside, sealing it like an envelope.
  6. Roll dough into a rectangle and fold into thirds; chill for 30 minutes. Repeat this rolling and folding process two more times.
  7. Roll out final dough to about 1/4 inch thick; cut into rectangles.
  8. Place chocolate on one edge of each rectangle; roll tightly and tuck seams underneath.
  9. Let croissants rise for about 1.5 to 2 hours until puffy.
  10. Brush croissants with egg wash before baking at 400°F (200°C) for about 15–18 minutes until golden brown.
