  • 1 red bell pepper, diced
  • ½ cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 ½ cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar or mozzarella
  • Olive oil (for greasing)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
  2. Lightly steam or sauté broccoli, garlic, and onions until tender.
  3. Shred zucchini and squeeze out excess moisture to prevent sogginess.
  4. In a large bowl, whisk together cottage cheese, eggs, salt, pepper, and optional paprika until well combined.
  5. Stir in the prepared vegetables and shredded cheese until fully incorporated.
  6. Pour the mixture into the greased baking dish and smooth the top with a spatula.
