  • 1¼ cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 4 roasted nori sheets (sushi-grade)
  • 1 cup imitation crab (or real crab meat)
  • 1 ripe avocado, sliced
  • 1 small cucumber, cut into thin strips
  • 2 tbsp spicy mayo (mayo + sriracha)
  • ½ cup toasted panko breadcrumbs or French fried onions
  • Cream cheese strips
  • Thinly sliced jalapeño
  • Teriyaki glaze

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Cook the rice with water in a rice cooker or on the stovetop according to package instructions.
  3. In a saucepan, mix rice vinegar, sugar, and salt until dissolved over low heat.
  4. Once the rice is cooked, gently fold in the vinegar mixture while it’s still warm. Allow it to cool.
  5. Wrap your bamboo sushi mat in plastic wrap to keep it clean.
  6. Place a bowl of water mixed with a bit of rice vinegar nearby to prevent sticking when handling the rice.
  7. Lay one sheet of nori shiny side down on your bamboo mat.
  8. Spread an even layer of cooled sushi rice over the nori, leaving about ½ inch at the top edge.
  9. Carefully flip the nori so that the rice is facing down.
  10. Layer imitation crab, sliced avocado, cucumber strips, and any optional ingredients along the center of the nori.
  11. Use your thumbs to lift the edge of the mat while holding down filling with your fingers.
  12. Gently but firmly roll it into a cylinder shape while sealing the edge as you go.
  13. Press down using the mat to shape it properly.
  14. Brush the top of your roll with spicy mayo or eel sauce for extra flavor.
  15. Generously sprinkle panko breadcrumbs or fried onions over it.
  16. Lightly press down with your mat to secure everything in place.
  17. Using a sharp damp knife, slice each roll into 8 pieces for easy serving.
