Ingredients

  • 4 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 2 teaspoons Salt
  • 2 teaspoons Instant Yeast
  • 1 1/2 cups Cold Whole Milk or Almond Milk
  • 1 cup Unsalted Butter (cold)
  • 12 pieces Semi-Sweet Chocolate Batons

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk and mix into a rough dough.
  2. Knead on a floured surface for about 5–7 minutes until smooth. Chill in the refrigerator for at least 30 minutes.
  3. Pound the butter between parchment paper into a rectangle. Encapsulate the butter in the chilled dough and seal edges.
  4. Roll out the dough to create layers by folding it into thirds and refrigerating after each fold (repeat twice).
  5. Cut triangles from the final rolled-out dough, place chocolate batons at the base, and roll to shape croissants.
  6. Allow to rise until doubled in size, brush with egg wash, and bake at 400°F (200°C) for about 20 minutes until golden brown.
