- 1/4 cup Granulated Sugar
- 2 teaspoons Salt
- 2 teaspoons Instant Yeast
- 1 1/2 cups Cold Whole Milk or Almond Milk
- 1 cup Unsalted Butter (cold)
- 12 pieces Semi-Sweet Chocolate Batons
Instructions
- In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk and mix into a rough dough.
- Knead on a floured surface for about 5–7 minutes until smooth. Chill in the refrigerator for at least 30 minutes.
- Pound the butter between parchment paper into a rectangle. Encapsulate the butter in the chilled dough and seal edges.
- Roll out the dough to create layers by folding it into thirds and refrigerating after each fold (repeat twice).
- Cut triangles from the final rolled-out dough, place chocolate batons at the base, and roll to shape croissants.
- Allow to rise until doubled in size, brush with egg wash, and bake at 400°F (200°C) for about 20 minutes until golden brown.
