  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • For the Filling: 1/4 cup unsalted sweet cream butter (softened), 1/2 cup smooth peanut butter, 1 1/2 cups powdered sugar, 2 tablespoons whole milk, 1/4 teaspoon pure vanilla extract.

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, baking soda, and kosher salt; set aside.
  3. In a separate bowl, beat softened butter and brown sugar until light and fluffy.
  4. Add peanut butter, egg, and vanilla to the mixture; combine well.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Roll tablespoon-sized dough balls in sugar before placing them on the prepared sheets.
  7. Bake for about 10 minutes or until edges are lightly golden; allow cooling.
  8. For the filling, beat together softened butter, peanut butter, powdered sugar, milk, and vanilla until creamy.
  9. Spread or pipe the filling onto half of the cookies and top with remaining cookies.
