  • 4 teaspoons Kosher salt
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon whole grain mustard
  • 2 teaspoons yellow mustard
  • 1/4 cup mayonnaise
  • 2 teaspoons apple cider vinegar
  • 1/3 cup chopped dill pickle
  • 1/4 cup sliced green onion
  • 1/4 cup diced celery
  • 1/3 cup chopped turkey bacon

Instructions

  1. Boil the potatoes in salted water until fork-tender (12-15 minutes), then drain.
  2. Preheat the oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  3. Smash boiled potatoes to about 1/2-inch thickness on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  4. Roast for 40-50 minutes until crispy, flipping halfway through.
  5. While roasting, whisk together honey, whole grain mustard, yellow mustard, mayonnaise, and apple cider vinegar in a bowl.
