Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together 1 3/4 cups all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
  3. In a large bowl, cream together 1/2 cup softened butter, 1/2 cup sugar, and 1/2 cup honey until light and fluffy.
  4. Add 2 large eggs one at a time and mix in 1 teaspoon vanilla extract.
  5. Gradually alternate adding the dry ingredients with 1/2 cup milk to the wet mixture until just combined.
  6. Gently fold in 1 cup finely diced peaches.
  7. Fill cupcake liners about two-thirds full with the batter and bake for 18–22 minutes or until a toothpick comes out clean.
  8. Allow cupcakes to cool completely before frosting.
  9. In another bowl, beat together 8 oz softened cream cheese and 1/4 cup softened butter until smooth.
  10. Gradually add 3 cups powdered sugar, then mix in 2 tablespoons honey and 1 teaspoon vanilla extract.
  11. Optionally add 2 tablespoons peach puree for extra flavor.
  12. Frost cooled cupcakes generously with the cream cheese frosting.
