  • 2 bunches celery, chopped
  • 2 large shallots, diced
  • 1 bunch fresh parsley, diced
  • 1 bunch fresh cilantro, diced
  • Handful toasted sunflower seeds
  • Handful chopped pistachios
  • Handful toasted sliced almonds
  • ½ cup dried blueberries or cranberries
  • 2 large lemons, juiced
  • ¼ cup plus 2 tablespoons avocado oil or olive oil
  • 1½ teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • ¼ cup honey

Instructions

  1. Wash and chop the celery, shallots, parsley, and cilantro.
  2. In a small bowl, whisk together lemon juice, avocado oil (or olive oil), salt, pepper, garlic powder, and honey until well combined.
  3. In a large mixing bowl, add the chopped celery, shallots, parsley, cilantro, sunflower seeds, pistachios, almonds, and dried blueberries (or cranberries).
  4. Pour the dressing over the salad mixture and toss well using tongs until evenly coated.
  5. Serve immediately or chill for about 30 minutes to enhance flavors before serving.
