  • 1/3 cup pumpkin puree
  • 1 1/2 cup granulated sugar
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups powdered sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons water
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F. Line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, mix melted butter, pumpkin puree, sugar, molasses, and vanilla until smooth. Add eggs one at a time.
  4. Fold the dry mixture into the wet mixture until just combined.
  5. Drop rounded tablespoons of dough onto prepared baking sheets with space in between.
  6. Bake for 10 to 12 minutes until lightly golden. Let cool on baking sheets for 5 minutes before transferring to wire racks.
  7. For the icing, whisk together powdered sugar, cinnamon, water, and vanilla; adjust consistency if needed.
  8. Frost cooled cookies and allow icing to set before storing.
