- 1 teaspoon cinnamon
- 2 tablespoons water
- 1 1/2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F. Line two large baking sheets with parchment paper.
- In a medium bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, mix melted butter, pumpkin puree, sugar, molasses, and vanilla until smooth. Add eggs one at a time.
- Fold the dry mixture into the wet mixture until just combined.
- Drop rounded tablespoons of dough onto prepared baking sheets with space in between.
- Bake for 10 to 12 minutes until lightly golden. Let cool on baking sheets for 5 minutes before transferring to wire racks.
- For the icing, whisk together powdered sugar, cinnamon, water, and vanilla; adjust consistency if needed.
- Frost cooled cookies and allow icing to set before storing.
