- 9 lasagna noodles (traditional or no-boil)
- 1 cup cooked shrimp, peeled and deveined
- 1 cup lump crab meat
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 14 oz canned diced tomatoes
- 1 cup low-sodium vegetable broth
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a skillet over medium heat, combine the diced tomatoes and vegetable broth. Add minced garlic and Italian seasoning; simmer for 10 minutes until fragrant.
- In a mixing bowl, combine ricotta cheese with half of the mozzarella, spinach, shrimp, crab meat, salt, and pepper; stir until well mixed.
- Spread a layer of sauce in the baking dish. Layer with noodles followed by half of the seafood filling. Repeat layers until all ingredients are used up, finishing with noodles topped with remaining sauce and mozzarella.
- Cover with foil and bake for 30 minutes. Remove foil for the last 10 minutes to allow the cheese to brown.
- Let cool slightly before serving hot with a sprinkle of Parmesan.
