  • 4 boneless, skinless chicken breasts
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 4 green onions, chopped
  • 3 tbsp toasted sesame oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp honey or agave syrup

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper, place in a baking dish, and bake for 20-25 minutes until cooked through. Let cool before slicing into strips.
  2. While the chicken cools, prepare the veggies: thinly slice cabbage, shred carrots, and chop bell pepper and green onions.
  3. In a bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey until smooth. Adjust seasoning as needed.
  4. In a large bowl, combine sliced chicken with veggies. Drizzle with dressing and toss gently. Serve with extra green onions or sesame seeds if desired.
