  • 1 cup pineapple chunks (fresh or canned)
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 1 tbsp grated ginger
  • 2 cloves garlic (minced)
  • 2 cups cooked rice (white or brown)

Instructions

  1. Season the chicken with salt and pepper, then dredge in flour.
  2. In a skillet over medium-high heat, cook the chicken until golden brown, about 3-4 minutes per side. Remove from skillet.
  3. Sauté ginger and garlic in the same skillet for about 30 seconds.
  4. Add pineapple juice, soy sauce, and brown sugar; simmer. Stir in pineapple chunks.
  5. Whisk in cornstarch mixture to thicken the sauce.
  6. Return chicken to skillet; coat well with sauce and simmer together for an additional 2 minutes.
  7. Serve over rice and garnish with sesame seeds and green onions if desired.
