Description

Spaghetti Aglio e Olio is a classic Italian dish that brings together the robust flavors of garlic and chili in a simple yet satisfying meal. This quick and easy recipe can be prepared in under 20 minutes, making it perfect for busy weeknights or casual gatherings.


Ingredients

  • 12 oz spaghetti
  • 6 cloves fresh garlic, thinly sliced
  • 1/2 cup extra virgin olive oil
  • 1 tsp red chili flakes (adjust to taste)
  • 1/4 cup fresh parsley, chopped
  • Salt to taste

Instructions

  1. Boil a large pot of salted water and cook 12 oz of spaghetti until al dente according to package instructions.
  2. While the pasta cooks, heat 1/2 cup of extra virgin olive oil in a large skillet over medium heat. Add the thinly sliced garlic and sauté until golden brown, about 2 minutes.
  3. Stir in 1 tsp of red chili flakes and mix well.
  4. Once the spaghetti is cooked, reserve some pasta water and drain the rest. Toss the drained spaghetti into the skillet with the garlic oil, adding reserved pasta water as needed for desired consistency.
  5. Remove from heat and mix in 1/4 cup chopped parsley. Serve immediately with additional chili flakes if desired.
