- 1 cup black beans (canned, rinsed)

- 2 tsp cumin
- 2 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Slice each poblano pepper in half lengthwise and remove the seeds.
- In a skillet over medium heat, sauté diced onion until translucent. Add minced garlic and ground turkey; cook until browned. Season with cumin, chili powder, salt, and pepper.
- Stir in cooked quinoa and black beans until well combined; fold in half the shredded cheese.
- Stuff each pepper half with the turkey mixture and place them in the prepared baking dish.
