  • 4 large poblano peppers
  • 1 lb ground turkey
  • 1 cup cooked quinoa
  • 1 cup black beans (canned, rinsed)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice each poblano pepper in half lengthwise and remove the seeds.
  3. In a skillet over medium heat, sauté diced onion until translucent. Add minced garlic and ground turkey; cook until browned. Season with cumin, chili powder, salt, and pepper.
  4. Stir in cooked quinoa and black beans until well combined; fold in half the shredded cheese.
  5. Stuff each pepper half with the turkey mixture and place them in the prepared baking dish.
  6. Top with remaining cheese, cover with foil, and bake for about 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.
