- 1 pound ground beef
- 1 cup diced onion

- 1–2 diced jalapeno peppers
- 1 teaspoon chipotle chili powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- 2 cups red salsa
- 1 (10-ounce) can enchilada sauce
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can corn, drained
- 2 boxes Jiffy cornbread mix
- 2 eggs
- 2/3 cup milk
- Sour cream, for garnish
- Chopped tomatoes or pico de gallo, for garnish
- Cilantro, for garnish
- Guacamole, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef for about 5–7 minutes; drain excess fat.
- Add onion, garlic, and jalapenos; sauté for another 3–4 minutes.
- Stir in spices (chipotle chili powder, paprika, salt, cumin, black pepper) and sauces (red salsa and enchilada sauce); simmer for 5 minutes.
- Mix in black beans and corn; transfer filling to a baking dish.
- In a bowl, combine cornbread mix, eggs, and milk; stir until just mixed and spread over filling.
- Bake for 25–30 minutes until cornbread is golden brown.
- Garnish with sour cream, tomatoes or pico de gallo, cilantro, and guacamole before serving.
