  • 4 medium poblano peppers
  • 1 lb ground beef or turkey
  • 2 cups shredded mozzarella and Monterey Jack cheese
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 tsp cumin
  • 2 cups tomato sauce
  • 1 medium onion, finely chopped

Instructions

  1. Preheat the oven to broil. Roast poblanos on a baking sheet until charred (10-15 minutes). Wrap in foil to steam for 10 minutes.
  2. In a skillet, brown the ground meat over medium heat; drain excess fat. Stir in cumin, salt, and pepper.
  3. Peel roasted peppers, slit them open, and remove seeds. Stuff with the meat mixture and cheese.
  4. Separate egg whites from yolks; beat whites until stiff peaks form. Mix yolks with flour and gently fold in egg whites.
  5. Heat oil in a frying pan. Dip stuffed peppers in batter and fry until golden (3 minutes per side). Drain on paper towels.
  6. Sauté onions until translucent; add tomato sauce and simmer for 10 minutes. Serve sauce over chiles.
