  • ½ tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 2 Tbsp tomato paste
  • 1 Tbsp chicken base
  • 2 ½ Tbsp flour
  • 5 cups chicken broth
  • 112 oz can evaporated milk
  • 2 cups cooked chicken (shredded)
  • 34 oz baby spinach
  • 1 pound shelf-stable gnocchi

Instructions

  1. In a large pot over medium heat, heat sun-dried tomato oil. Add onion, carrots, and celery; sauté until softened.
  2. Stir in sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper; cook until fragrant.
  3. Mix in tomato paste, chicken base, and flour; stir continuously for about one minute.
  4. Gradually add chicken broth while scraping the pot's bottom to incorporate flavors.
  5. Bring the mixture to a simmer; partially cover and let it cook on low heat for 15 minutes.
  6. Add cooked chicken, spinach, evaporated milk, and gnocchi; heat through for another 5-10 minutes.
  7. Serve hot with grated parmesan cheese on top.
