  • 1 cup pastina pasta (stelline shape)
  • 1 brown onion
  • 2 carrots
  • 2 celery sticks
  • 4 garlic cloves
  • 6 cups vegetable broth (or chicken broth)
  • Salt and black pepper to taste

Instructions

  1. Chop the onion, carrots, celery, and garlic.
  2. In a large pot, combine vegetable broth with chopped vegetables. Season with salt and pepper.
  3. Bring to a simmer over medium-high heat, cover, and cook for 20 minutes until tender.
  4. Remove solids using a slotted spoon. Blend the cooked vegetables with ½ cup of water until smooth.
  5. Return the puree to the pot with remaining broth and bring back to a boil.
  6. Stir in pastina pasta and cook for 5–6 minutes until al dente.
  7. Serve hot, garnished with parsley or olive oil if desired.
