- 1 tbsp butter
- 5 cups water (or broth)
- 1 red apple (grated)
Instructions
- Chop vegetables into chunks and mince the garlic.
- Soak potato chunks in warm water for 15 minutes.
- Season beef cubes with salt and let sit for 10 minutes.
- Brown the beef in a pot over medium heat, then remove.
- Sauté onions in butter until caramelized, then add garlic, potatoes, and carrots.
- Return beef to the pot and add water, grated apple, honey, ketchup, and Worcestershire sauce; stir well.
- Simmer covered for about 15 minutes, skimming any scum that forms.
- Check potato tenderness; if done, turn off heat.
- Gradually add curry roux; dissolve slowly with chopsticks.
- Simmer uncovered for another 15 minutes until thickened.
