  • 2 large onions
  • 2 medium carrots
  • 3 Yukon gold potatoes
  • 2 cloves garlic
  • 1 lb cubed beef (or chicken/turkey)
  • 8 oz Japanese curry roux
  • 1 tbsp butter
  • 5 cups water (or broth)
  • 1 red apple (grated)

Instructions

  1. Chop vegetables into chunks and mince the garlic.
  2. Soak potato chunks in warm water for 15 minutes.
  3. Season beef cubes with salt and let sit for 10 minutes.
  4. Brown the beef in a pot over medium heat, then remove.
  5. Sauté onions in butter until caramelized, then add garlic, potatoes, and carrots.
  6. Return beef to the pot and add water, grated apple, honey, ketchup, and Worcestershire sauce; stir well.
  7. Simmer covered for about 15 minutes, skimming any scum that forms.
  8. Check potato tenderness; if done, turn off heat.
  9. Gradually add curry roux; dissolve slowly with chopsticks.
  10. Simmer uncovered for another 15 minutes until thickened.
  11. Serve hot over rice.
