  • 7 medium Japanese sweet potatoes
  • ⅔ cup sugar
  • 3 egg yolks
  • ¼ cup cornstarch
  • ¼ tsp salt
  • 3 cups milk
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • ¼ cup sugar (for caramelizing)

Instructions

  1. Preheat oven to 392°F (200°C). Wrap each sweet potato in aluminum foil and place on a baking sheet. Roast for about 1 hour and 10 minutes until tender.
  2. For the custard: In a saucepan, mix sugar, cornstarch, and salt. Gradually whisk in milk over medium heat until thickened.
  3. In a bowl, beat egg yolks and slowly add some hot milk mixture to temper them. Return to saucepan and cook until thickened.
  4. Stir in butter and vanilla extract until smooth. Allow custard to cool.
  5. Once sweet potatoes are cool enough to handle, cut off the tops and scoop out some flesh. Fill with custard cream.
  6. Sprinkle sugar on top of each filled potato and use a blowtorch to caramelize until golden brown.
