  • 1/2 cup breadcrumbs
  • 2 tbsp jerk seasoning
  • 1 egg
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 (13.5 oz) can coconut milk
  • 2 tbsp curry powder
  • 1 cup chicken broth
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, jerk seasoning, egg, onion, garlic, salt, and pepper. Mix until just combined.
  2. Roll the mixture into 1-inch meatballs and place on a baking sheet.
  3. Heat oil in a skillet over medium heat and brown the meatballs for 2-3 minutes on each side.
  4. In the same skillet, add coconut milk, curry powder, chicken broth, brown sugar, and soy sauce; stir well.
  5. Simmer the sauce for 10-15 minutes until thickened.
  6. Add the meatballs to the sauce and simmer for an additional 5 minutes until cooked through.
  7. Garnish with fresh cilantro before serving.
