- 1/2 cup breadcrumbs
- 2 tbsp jerk seasoning
- 1 egg
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1/4 tsp black pepper
- 1 (13.5 oz) can coconut milk
- 2 tbsp curry powder
- 1 cup chicken broth
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1/4 cup chopped fresh cilantro for garnish
Instructions
- In a mixing bowl, combine ground beef, breadcrumbs, jerk seasoning, egg, onion, garlic, salt, and pepper. Mix until just combined.
- Roll the mixture into 1-inch meatballs and place on a baking sheet.
- Heat oil in a skillet over medium heat and brown the meatballs for 2-3 minutes on each side.
- In the same skillet, add coconut milk, curry powder, chicken broth, brown sugar, and soy sauce; stir well.
- Simmer the sauce for 10-15 minutes until thickened.
- Add the meatballs to the sauce and simmer for an additional 5 minutes until cooked through.
- Garnish with fresh cilantro before serving.
