  • 2 tbsp pineapple juice

Instructions

  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gently fold in the sour cream until combined.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Fold in the well-drained crushed pineapple.
  8. Pour the batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
  9. While baking, whisk together icing sugar and pineapple juice for the glaze.
  10. Allow the cake to cool completely before drizzling with glaze.
