- 1 medium onion, chopped
- 2 medium tomatoes, pureed

- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- ½ teaspoon red chili powder (adjust to taste)
- ¼ teaspoon turmeric powder
- 2 tablespoons vegetable or olive oil

Instructions
- Gather all ingredients. Chop vegetables and cube the paneer.
- Heat oil in a non-stick skillet over medium heat. Add cumin seeds until fragrant.
- Sauté onions until golden brown to enhance sweetness.
- Stir in ginger-garlic paste and sauté until aromatic.
- Add spices (coriander powder, red chili powder, turmeric, salt) and mix before adding pureed tomatoes. Cook until oil separates.
- Add diced bell peppers; cook for 2-3 minutes until slightly tender but crisp.
- Gently fold in cubed paneer and sprinkle garam masala on top, mixing carefully.
