Ingredients
- 200 grams ground beef
- 400 grams lean ground beef
- 1 large egg
- 100 grams crustless bread
- 125 ml white grape juice
- 4 tablespoons butter
- 2 cups hot water or stock (vegetable, beef, or chicken)
- Juice of 8–10 lemons
- 100 grams onion (minced)
- 4 garlic cloves (minced)
- ½ teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 teaspoons dried parsley
- 1 teaspoon fine sea salt
- ½ teaspoon ground pepper

Instructions
- In a mixing bowl, combine ground beef, egg, bread, grape juice, onion, garlic, cumin, oregano, parsley, salt, and pepper. Mix until well combined.
- Shape the mixture into small meatballs about 1 inch in diameter and place on a parchment-lined baking sheet.
- Heat olive oil in a frying pan over medium heat and cook meatballs in batches until browned on all sides. Remove and set aside.
- In the same pan, melt butter and stir in flour to form a roux. Gradually whisk in hot water or stock until smooth; add lemon juice and season with salt and pepper.
- Return meatballs to the pan with sauce and simmer for 10-15 minutes until heated through.
