  • 2 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar (plus more for garnish)
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 2/3 cup fresh lemon juice (about 45 lemons)
  • 4 large eggs
  • 2 cups sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, softened butter, powdered sugar, and salt until crumbly.
  3. Press the mixture into the bottom of a greased 9×13 inch baking pan and bake for about 15 minutes or until lightly golden.
  4. While the crust bakes, whisk together lemon zest, lemon juice, eggs, and sugar in another bowl until smooth.
  5. Pour the lemon filling over the hot crust and return to the oven to bake for an additional 25-30 minutes until set.
  6. Allow to cool completely at room temperature before cutting into squares and dusting with powdered sugar.
