- 1/2 cup (100 grams) granulated sugar
- 1 cup (92 grams) rolled oats
- 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
- 4 large eggs
- 1/2 cup (160 grams) honey
- 1 tablespoon lemon zest
- 1/2 cup (120 ml) freshly squeezed lemon juice
- 1/4 cup (31 grams) all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine melted butter and granulated sugar until blended. Stir in rolled oats and flour until crumbly. Press into the bottom of a baking dish.
- Bake the crust for 15 minutes or until lightly golden. Let it cool slightly.
- Whisk together eggs and honey in another bowl until smooth. Add lemon zest, lemon juice, and flour; mix well.
- Pour the lemon filling over the cooled crust evenly.
- Bake again for 20-25 minutes or until set but slightly jiggly in the center.
- Cool completely before cutting into squares.
