- 1/3 cup vegetable oil

- 1 lemon, juiced and zested
- 1 + 1/2 cups fresh blueberries, divided
- ½ cup icing sugar
- 1–2 tablespoons lemon juice

- Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together flour, baking powder, sugar, and salt until well combined.
- In a separate bowl, mix milk, vegetable oil, egg, vanilla extract, lemon juice, and lemon zest until smooth.
- Gradually add the wet mixture to the dry ingredients and stir gently using a rubber spatula until just combined; fold in 1 cup of blueberries.
- Pour the batter into the prepared loaf pan and sprinkle remaining blueberries on top.
