  • 1 lemon, juiced and zested
  • 1 + 1/2 cups fresh blueberries, divided
  • ½ cup icing sugar
  • 12 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt until well combined.
  3. In a separate bowl, mix milk, vegetable oil, egg, vanilla extract, lemon juice, and lemon zest until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir gently using a rubber spatula until just combined; fold in 1 cup of blueberries.
  5. Pour the batter into the prepared loaf pan and sprinkle remaining blueberries on top.
  6. Bake for 55 minutes or until golden brown and a toothpick inserted into the center comes out clean.

  8. For the glaze, combine icing sugar and lemon juice in a bowl until smooth; drizzle over cooled bread.
