  • 12 fresh oysters on the half shell
  • 6 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • Sea salt and black pepper

Instructions

  1. Preheat your grill to high heat (about 500°F / 260°C).
  2. In a small saucepan over low heat, melt the butter, then add minced garlic and sauté until fragrant.
  3. Stir in lemon juice, lemon zest, parsley, sea salt, and black pepper; remove from heat.
  4. Place cleaned oysters on the grill with flat sides up; close lid and cook for about 2–3 minutes until edges curl.
  5. Spoon about 1 teaspoon of the lemon butter sauce onto each oyster; close lid and cook for another 1–2 minutes until sizzling.
  6. Carefully remove oysters using tongs and serve immediately with lemon wedges and extra parsley if desired.
